Fried rice
Cook 1 cup rice, cool it, and refrigerate if possible.Heat 2 tbsp oil, stir-fry 1 chopped onion, 1 diced carrot, ½ cup peas, and 1 bell pepper for 2-3 minutes.Add 2-3 minced garlic cloves and sauté for 30 seconds.Add the cooled rice, stir-fry for 3-4 minutes, then season with soy sauce, sesame oil, and salt.Scramble 1 egg in the pan, mix with rice, and garnish with spring onions. Serve hot!

Rajma chawal
Soak 1 cup rajma overnight, cook in a pressure cooker with 4 cups water and salt for 3-4 whistles until tender.Heat 2 tbsp oil, sauté 1 chopped onion, 2 minced garlic cloves, 1-inch ginger, and 2 chopped tomatoes until soft.Add 1 tsp cumin, 1 tsp coriander, ½ tsp turmeric, 1 tsp garam masala, and salt. Cook for 2 minutes.Add cooked rajma with some liquid to the masala, cook for 10-15 minutes. Add water for desired consistency.Serve with steamed rice, garnish with coriander, and enjoy!

Kadhi chawal
Whisk 1 cup yogurt, 1 tbsp besan, 1 cup water, and salt to make the kadhi mixture.Heat 1 tbsp oil, temper mustard seeds, cumin, dried chilies, bay leaf, and asafoetida for 30 seconds.Add the kadhi mixture, bring to a boil, then simmer for 15-20 minutes, stirring occasionally.Heat 1 tbsp ghee, sauté cumin, coriander powder, and red chili powder, then add to the kadhi.Cook 1 cup rice, serve with kadhi, and garnish with coriander. Enjoy!

Lemon rice
Cook 1 cup rice, cool, and fluff it.Heat 2 tbsp oil, temper mustard seeds, cumin, dried red chilies, green chilies, curry leaves, and asafoetida.Add ½ tsp turmeric and salt, stir well.Mix in the cooked rice and squeeze the juice of 1 lemon over it.Garnish with roasted peanuts or cashews and serve with yogurt or curry. Enjoy!
